COQUELICOT (POPPY SEED CAKE)

 



We had people over today, a good reason to bake a cake. It was so long since the last time that I thought I'd document the rare occasion in photos and share the recipe. I found the recipe on my friend Sanna's website, the original recipe in Finnish here.











What you need:
200 g butter
3 1/4 dl all-purpose flour
2 1/4 dl sugar
3 eggs
1 tsp baking powder
1/4 tsp salt
4 tbsp poppy seeds
2 tbsp grated lemon zest
1/4 dl cream
85g ricotta


Method:
Preheat the oven to 175 C. Whisk the sugar and soft butter. Add the eggs one at a time. Combine the flour, salt and baking powder and gradually add to the mix stirring constantly. Stir in the poppy seeds and grated lemon zest. Finally add the cream and ricotta.
Grease and flour a tin. Pour the cake mix into the tin and bake in the oven for approximately 45 minutes.
